Banana Cake

Banana Cake - a vintage clipped recipe.


1/2 cup shortening
1 1/2 cups sifted sugar
2 eggs
2 1/4 cups cake flour
1/2 teaspoon baking powder
3/4 teaspoon soda
1/2 teaspoon salt
1 cup lightly mashed bananas
1 teaspoon vanilla
1/4 cup sour milk

2 sliced bananas


Cream 1/2 cup shortening, add gradually 1 1/2 cups sifted sugar, and beat until light and creamy. Beat in one at a time 2 eggs. Sift together 2 1/2 cups cake flour, 1/2 teaspoon baking powder, 3/4 teaspoon soda and 1/2 teaspoon salt to 1 cup lightly mashed bananas add 1 teaspoon vanilla and 1/4 cup sour milk. Add the sifted ingredients to the first mixture alternately with banana mixture. Beat after each addition until smooth. Bake in two greased nine-inch layer-cake pans in a moderate oven, 350-degrees, for about 30 minutes. Remove from pans, cool. Place 2 sliced bananas between the layers and spread the cake with any white icing, or sprinkle with powdered sugar.
