Chicken Supreme, a vintage handwritten recipe


4 chicken breasts
Soda crackers
1/4 cup butter


Buy a package of four breasts, skin and debone (save bones). Crush soda crackers; dip breasts in milk then crackers - sprinkle with pepper, salt, and paprika. Put on a baking rack in a pan, drizzle tad less than 1/4 cup melted {?butter?} on each one. 

Bake 25 minutes at 350-degrees. Turn and repeat drizzle and cook another 25 minutes. 

Meanwhile put bones, celery, onion, carrots and bay leaf in about 6 cups of water and simmer for a couple of hours. Good base for soup or chicken and dumplings. 



3 tablespoons butter (or margarine)
3 tablespoons flour
1 1/2 cups strained broth
3 tablespoons grated cheese
1/4 teaspoon dry mustard
Salt and pepper to taste


Melt 3 tablespoon butter (or margarine), add 3 tablespoon flour and mix; add slowly about 1 1/2 cups strained broth. When smooth and thick, add about 3 tablespoons grated cheese, 1/4 teaspoon dry mustard, salt, and pepper to taste. 

Just before serving, add a little good sherry!
