Cucumber Soup

Cucumber Soup

Ingredients

1/2 cup lean pork or ham
2 cucumbers
1-quart water, with 1 teaspoon MSG, salt to taste or
1-quart meat stock
2 eggs, well beaten

Method 

Cut into thin slices 1/2 cup lean pork or ham.  Peel and seed 2 cucumbers, cut crosswise into slices 1/4-inch thick.  

Bring to a boil one-quart water with 1 teaspoon MSG, and salt to taste, or one-quart meat stock. 

Place meat and cucumbers in boiling liquid; cover and simmer 10 minutes, or until cucumbers are tender.  Stir in 2 eggs, well beaten. 


 

Notes:
Light, fine summer soup.
