L.B.J.'s Favorite Roast

L B J's Favorite Roast, a vintage handwritten recipe

Ingredients

4-pound lean roast
Juice of 1 lemon
1 onion, chopped
1/2 teaspoon thyme
1 clove garlic, crushed
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 cup water

Method

Mix together and pour over roast and refrigerate overnight. Turn occasionally. 

Sprinkle roast with 2 tablespoons flour, brown in 2 tablespoons butter in a heavy pan. Pour marinade over meat and cook, covered at 325-degrees.
