Libby's Sugar Cookies

Ingredients

1 cup Mazola oil
1 cup margarine or butter
1 cup confectioner’s sugar (10X)
1 cup granulated sugar
4 cups plus 2 tablespoons flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cream of tartar
1 teaspoon vanilla or almond extract

Method

Preheat oven to 350-degrees. 

Cream oil, oleo, and sugars. Add vanilla, mix well. Put dry ingredients together and mix well with sugar mixture. 

Form small balls. Take a small glass, dip in water and press on the cookie. (Cookie should be about 2-inches in diameter.)*

Bake 10-12 minutes. Sprinkle with sugar. Good without sugar or with a sugar-cinnamon mixture. 

* Don’t mash too hard – cookies should be small, they don’t flatten at all when baking.
