Seafood Mousse

Ingredients

Have ready in a large bowl –

1 to 1 1/2 cups flacked seafood (shrimp, crab, tuna, or any cooked filet)
4 hard cooked eggs – sliced
4 to 6 green onions – sliced
2 slices red pimento – chopped
2 tablespoons pickle relish
A few chopped or sliced mushrooms
A few sliced green or black olives
1/4 cup chopped celery and green pepper

2 envelopes Knox gelatin
2 cups mayonnaise (or part sour cream)

Method

Soften 2 envelopes of Knox gelatin in 1/2 cup water, cook over hot water in double boiler until dissolved.

Add to 2 cups mayonnaise (part sour cream may be used). 

Combine mayo mixture add seafood mixture – Season to taste – salt, pepper, celery salt, etc. 

Place or pack in mold – sets in 3 or 4 hours.
