1 cup Hi-Ho Crackers
1 cup sugar
1 teaspoon vanilla
1/2 cup nuts, chopped
Beat eggs, add sugar (gradually), add cracker crumbs, nuts, and vanilla. Spread in 9x9 square pan and bake 25 minutes in a 350-degree oven.
Spread with jam or fruit and server with whipped cream.
I have not see Hi-Ho Crackers in years, so I guess Ritz Crackers would be a suitable substitute.
