Spicy Apple Pie

Ingredients

Pastry dough
6-7 cups pared, cored sliced apples
2/3 – 3/4 cup sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon salt
1/2 teaspoon grated lemon rind
1-2 teaspoons lemon juice
1 tablespoon butter
Cream

Ice cream 

Method

Arrange pastry on a 9-inch pie plate. 

Into it put 1/2 of 6-7 cups pared, cored, sliced apples, 2/3 – 3/4 cup sugar, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1/8 teaspoon salt, 1/2 teaspoon grated lemon rind, 1-2 teaspoons lemon juice.  Sprinkle half this on the apples (sugar & lemon juice vary with apples).  Add rest of the apples; sprinkle these with the rest of the sugar.  Dot with 1 tablespoon butter.  Put on pastry top.  Brush the top of the pie with cream. 

Bake in 425-degree oven 40 minutes, or until the apples test tender with a fork.  

Serve hot with ice cream.
