String Beans Au Gratin

Ingredients
1 1/2 pounds string beans
4 tablespoons butter
3 tablespoons flour
2 cups milk
2 egg yolks, beaten
1 1/2 cup American cheese, grated
1/3 cup breadcrumbs
Method
Cook 1 1/2 pounds of string beans until tender. Make a white sauce using 4 tablespoons butter, 3 tablespoons flour and 2 cups milk. Add 2 beaten egg yolks and 1 1/2 cups grated American cheese. {Season}. Add beans, pour into buttered baking dish, cover with 1/3 cup bread crumbs and bake in a moderate oven 25 minutes.
Notes:
From Marcia Bigner ~ When Mother makes this, she doesn't add cheese to the cream sauce but sprinkles it over the top with the breadcrumbs. I have also added onion and new potatoes to the string beans, and this is good.
