Apple Sauce Cup Cakes

Ingredients

2 1/2 cups sifted cake flour
1 2/3 cups sugar
3/4 cup applesauce
2/3 cup Crisco
1 teaspoon salt
3 1/2 teaspoons double-acting baking powder*
1/2 cup thin tart applesauce
3 whole eggs
1 tablespoon grated orange rind

Method

Measure into mixing bowl: (All Measurements Level) 2 1/2 cups sifted cake flour, 1 2/3  cups sugar, 3/4 cup applesauce, 2/3 cup Crisco, 1 teaspoon salt. Beat vigorously by hand or mixer (medium speed) for 2 minutes.  Stir in: 3 1/2 teaspoons double-acting baking powder. Add 1/2 cup thin tart applesauce, 3 whole eggs, 1 tablespoon grated orange rind. Beat vigorously by hand or mixer (medium speed) for 2 minutes. Fill 1/2 full medium cupcake pans which have been rubbed with Crisco and dusted with flour. 

Bake 400-degrees for 15 to 20 minutes. Ice with Creamy Icing.

* With tartrate type, use 4 1/2 teaspoons. 

Creamy Icing

Ingredients

2 1/3 cups sifted confections sugar
1/4 teaspoon salt
1 egg
2 tablespoons water
1/4 cup granulated sugar
1/2 cup Crisco
1 teaspoon vanilla

Method

Mix confectioners sugar, salt, and egg. Boil the water and granulated sugar together for one minute, then blend with the sugar and egg mixture. Add Crisco and vanilla. Beat until creamy.
