Cod with Potatoes and Onions

Ingredients

2 oz sliced  onions, separated into rings
3/4 cup beef bouillon
6-ounces boiled potatoes (about 2 medium), sliced
8-ounces cooked cod, cut into 1 1/2 X 2-inch pieces
1 tablespoon minced parsley

Method

In a small saucepan cook onions in bouillion 4 minutes or until onions are just tender, drain.  Place 1/2 of potatoes in an even layer in baking dish.  Top with half of the onion rings, then half of the fish.   Sprinkle with half of the parsley.  Repeat.  Slowly pour remaining bouillion over layers.  Bake at 350-degrees for 15 minutes.  

Make 2 servings.
