Hot Potato Salad

Hot Potato Salad, a vintage clipped recipe


4 slices bacon, diced
1/2 cup finely chopped onion
6 hot cooked medium-sized potatoes, sliced
2 hard-cooked eggs, coarsely chopped
1egg, well beaten
1/4 cup vinegar
2 teaspoons salt
1/4 teaspoon celery seed


In a large frying pan, cook until light brown: 4 slices diced bacon,  and 1/2 cup finely chopped onion; drain reserving fat. 

Combine bacon and onion with 6 hot cooked medium-sized sliced potatoes, 2 hard-cooked coarsely chopped eggs. Beat together with reserved bacon fat, 1 well-beaten egg, 1/4 cup vinegar, 2 teaspoons salt, 1/4 teaspoon celery seed. 

Pour over potato mixture. Mix well. Heat over boiling water. Serve hot. Serves 6.
