Lemon Jell-O Cake

Ingredients

1 package of Duncan Hines White Cake Mix
1/2 (scant) cup Mazola oil
4 eggs
1 package Lemon Jell-O
1 cup hot water
 

Icing

2 cups powdered sugar
Juice of 1 lemon
1/2 teaspoon grated lemon rind
1 tablespoon water

Method

Put 1 package of Duncan Hines White Cake Mix, 1/2 (scant) cup Mazola oil, and 4 eggs together in big mixing bowl.  In the meantime, dissolve 1 package of Lemon Jell-O in 1 cup of hot water.  Let cool.  Beat the first part with an electric beater; add the cooled Jell-O, and beat well until it is all blended. 

Bake in 13x9x2 pan at 350-degrees for about 45 minutes or until it begins to pull away from sides of the pan.  Do not remove from pan, therefore pan should be greased and floured previously.  Immediately upon taking it from the oven, prick the top lightly with a fork, then pour over this icing:

2 cups powdered sugar, juice of 1 lemon, 1/2 teaspoon grated lemon rind, 1 tablespoon water.  This icing should be of medium-thin consistency.
