Lobster Sauce on Pancakes

Buttermilk Griddle Cakes

Ingredients

1 egg, well beaten
1 cup commercial buttermilk
1/2 cup sweet milk
1 tablespoon melted butter
2 cups flour
1/2 teaspoon salt
1 teaspoon soda
2 tablespoons cornmeal

Method

Combine first 4 ingredients, mixing well. Sift remaining ingredients together and add to the first mixture. Fry on greased griddle over moderate heat, turning when batter bubbles. Remove to hot platter when brown on both sides.

Serve with Lobster Sauce.

Maine Lobster Sauce

Ingredients

1 2-pound lobster, boiled
1/4 cup butter, melted
1 tablespoon cooking sherry (optional)
1 tablespoon flour
1 cup cream
2 egg yolks, well beaten
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1/8 teaspoon grated nutmeg

Method

Slice lobster meat into thin slices, keeping claws whole as garnish if desired. Saute in butter 3 or 4 minutes over low heat. Sprinkle with flour. Add sherry (optional), and cream. Add egg yolks and seasonings; stir until thickened. 

Note: frozen or canned Maine lobster may be substituted for the fresh.
