Shrimp-Cucumber Dip

Ingredients

1 medium cucumber (unpeeled)
1 cup cream style cottage cheese
2 tablespoons onion, chopped fine
2 teaspoons vinegar
1/2 teaspoon prepared horseradish
1 4.5 ounces can shrimp – drained and chopped

Method

Cut cucumber in half lengthwise, remove seeds and shred enough for 1 cup. Drain. In a small mixing bowl, combine cucumber, cottage cheese, onion, vinegar, and horseradish. Beat until smooth. Stir in shrimp. 

Makes 2 cups. 

Serve with crackers, celery, and carrot sticks.
