Remove from heat. Stir in 1 teaspoon salt and 1 tablespoon sugar. Crumble into mixture 1 cake compressed yeast (or 1 package dry granular yeast). Stir until well dissolved. Mix in 1 egg and 2 tablespoons soft shortening. Mix in (just enough to handle easily) 2 to 2 1/4 cups sifted Gold Medal Flour.</p> <p>Mix dough with hand until moderately stiff. Turn out onto a floured board and knead several times until smooth. Shape as directed below. Cover with damp cloth and let rise at 85-degrees until impression remains when the dough is touched lightly with finger 25 to 35 minutes. </p> <p>Bake 20 to 25 minutes in a moderately hot oven (400-degrees), until golden brown. Serve immediately. </p> <h2>Cinnamon Swirls</h2> <p>Roll out dough into rectangle 12x7-inches. Spread surface with 1 tablespoon soft butter. Sprinkle with 1/4 cup sugar, 1 teaspoon cinnamon. Roll up beginning at wide side. Seal well by pinching edge of dough into roll. Cut in 12 slices. Place, cut-side down, with a little space between, in greased 9-inch round pan. After baking, if desired, frost with confectioners' sugar icing. Makes 12 rolls. </p> <h2>Pecan Rolls</h2> <p>Make as Cinnamon Swirls - except place cut slices in a pan coated with 1/4 cup each melted butter, brown sugar, and pecans. When baked, turn pan upside down onto a serving plate for a few minutes. </p> <p> </p> <p>* If raw milk is used, scald and cool to lukewarm.</p> <p>** If dry granular yeast is used, follow the package directions. Or add to 1/4 cup warm water. Stir thoroughly before adding to liquid mixture in the recipe. Bake 50 to 60 minutes in preheated oven. </p> <h2>Banana Nut Bread</h2> <p>Make this the day before you plan to serve it. </p> <h4>Ingredients</h4> <p>3 very ripe bananas, mashed<br /> 1/2 cup oil<br /> 1 cup sugar<br /> 2 eggs<br /> 2 cups flour<br /> 1 teaspoon baking soda<br /> 1/2 teaspoon baking powder<br /> 1/2 teaspoon salt<br /> 1/2 teaspoon vanilla<br /> 3 tablespoons milk<br /> 1/2 cup nuts, chopped</p> <h4>Method</h4> <p>Preheat oven to 350-degrees. </p> <p>Mash bananas. Add oil and sugar; mix well. Add eggs, dry ingredients, vanilla, milk, and nuts. Pour into a greased and floured 9x5x3-inch pan. Bake for one hour. Cool bread before removing from pan. </p> <p>This recipe is originally from Gourmet Magazine. </p> <h2>Banana Nut Bread</h2> <h4>Ingredients</h4> <p>1 1/2 sticks (3/4 cup) butter, softened<br /> 1 1/3 cups sugar<br /> 2 eggs<br /> 1 1/2 cups mashed very ripe bananas<br /> 2 3/4 cups flour<br /> 1 teaspoon baking soda<br /> 1 teaspoon double-acting baking powder<br /> 1/2 teaspoon salt<br /> 1/2 cup sour cream<br /> 1 cup chopped walnuts</p> <h4>Method</h4> <p>Preheat oven to 350-degrees. </p> <p>In a bowl, cream together the softened butter and sugar until the mixture is light. Add eggs, one at a time, beating well after each addition. Mix in mashed bananas.</p> <p>In another bowl, sift together the flour, baking soda, baking powder, and salt. Add the flour mixture to the banana mixture alternately with sour cream. Combine this mixture well. Stir in walnuts. </p> <p>Pour the batter into a buttered loaf pan, 9x5x2 3/4-inches, and bake bread in preheated oven for one hour and 15 minutes or until a cake tester inserted in the center comes out clean. Transfer the bread to a rack and let it cook for 20 minutes.
