Baked Sweet Potato with Apricots & Bourbon

Baked Sweet Potatoes with Apricots and Bourbon


1/3 cup bourbon
1/2 cup chopped, dried apricots
5 pounds sweet potatoes
1/2 cup brown sugar
1/3 cup butter
1 teaspoon vanilla


1.  In bowl, pour bourbon over dried apricots
2.  Scrub sweet potatoes, and pierce; bake 350-degrees 1.5  hours
3.  Peel {potatoes} and place in large bowl, add brown sugar, butter, and vanilla to bowl and mash with a potato masher.  Stir in apricots and bourbon.  Spoon in a shallow 2.5-quart dish, spread level
4.  Bake uncovered about 30 minutes. 

Serve warm
