Carrot Coconut Bread

A vintage handwritten recipe card for Carrot Coconut Bread


2 cups flour
1 1/4 cup sugar
2 teaspoons soda
2 teaspoons cinnamon
3/4 teaspoon salt
3 eggs, beaten
1 cup oil
1 teaspoon vanilla
3 cups grated carrots
1 1/3 cup coconut
1/2 cup raisins


Mix flour, sugar, soda, cinnamon, and salt. Add beaten eggs, oil, and vanilla to the dry ingredients and blend well. Add grated carrots, coconut, and raisins.

Bake at 350-degrees for 1 hour and 15 minutes. 

Makes two 9x5 loaf pans or three small loaf pans.
