Coconut Cookies - Adkins

Ingredients

1/2 cup oleo
1/2 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs, well beaten
1 teaspoon coconut flavoring
1 teaspoon vanilla flavoring
1 1/2 cup flour
1 teaspoon soda
1 teaspoon salt
3 cups oatmeal
1/2 cup coconut
1/2 cup nuts, chopped

Method

Cream 1/2 cup oleo, 1/2 cup shortening, 1 cup white sugar, and 1 cup brown sugar. Add 2 well-beaten eggs to creamed sugar and shortening, and add 1 teaspoon coconut flavor, and 1 teaspoon vanilla. 

Sift together 1 1/2 cup flour, 1 teaspoon baking soda, 1 teaspoon salt and add to the first mixture and mix well; then add 3 cups oatmeal, 1/2 cup coconut, and 1/2 cup chopped nuts. (I used peanuts sometimes). 

Drop by teaspoon on a greased baking sheet. 

Bake at 350-degrees, 10 to 12 minutes.
