BH&G Casserole Cookbook

Ideas for entertaining, speedy suppers, one-dish family meals. 

This is Better Homes & Garden’s Casserole Cookbook, first published in 1968.  Pictured here is a copy of the eighth printing, 1972 version.   This cookbook contains 160 pages of recipes, menu suggestions, and entertaining tips.  Pictured on the cover is the Meatball Vegetable Bake, that will “satisfy the heartiest appetites”.   The recipe is listed in the “Every day One Dish Meal” section of the cookbook.  The recipe is as follows:

Meatball Vegetable Bake

Ingredients

1 1/2 pounds 1 slightly beaten egg 1 cup soft bread crumbs 1/4 cup milk 2 tablespoons dry onion soup mix Dash peer 2 tablespoons salad oil 1 1-pound can tomatoes 1/2 cup cold water 2 tablespoons all-purpose flour 1 tablespoon beef-flavored gravy base 1/ 1/2 cups carrots sliced lengthwise and cut into thirds 2 medium onions, quartered 1 cup bias-sliced celery chunks

Method

Thoroughly combine meat, egg, breadcrumbs, milk, soup mix, and pepper.  Shape into 8 or 10 meatballs.  Brown lightly in hot oil in large skillet.  Remove meatballs and drain off excess fat; add tomatoes.  Blend water, flour, and gravy base; stir into tomatoes.   Cook until mixture thickens and bubbles.  Add meatballs, carrots, onions, and celery.  Cover; simmer 15 minutes.  Pour into 2-quart casserole.  Cover; bake at 350-degrees for 1 hour or till vegetable are tender.   Serves 4 or 5.  – Page 6, BH&G Casserole Cookbook.     Sections included in this cookbook are:
