What are Variety Meats?  I asked the same thing.  Liver, oxtails, tongue, and sweetbreads.  I think they could have put two more paintings in rather than waste ink on those recipes.   The Norman Rockwell Christmas Dinner is a baked glazed ham, candied sweet potatoes, minted peas, Christmas crullers and plum pudding.
