Cornbread or Muffins

Cornbread or Muffins, a handwritten recipe card.

Ingredients

1 cup cornmeal
1 cup all-purpose flour
3 1/2 teaspoon baking powder
2 tablespoons sugar
1 teaspoon salt
1 egg
1 cup milk
1/4 cup melted shortening

Method

Sift flour - measure - sift again with cornmeal, baking powder, sugar, and salt. Beat egg slightly, add milk and shortening; combine with dry ingredients stirring only until moist. Pour into well-greased pan or muffin tins. 

Bake in moderate oven, 450-degrees, 30 minutes or until done.
