Vintage typed recipes for Dessert Fillings and Frostings

Basic Fruit Filling

1 1/2 cups sugar
3/4 cup boiling water
2 egg whites
Vanilla
1/2 cup chopped raisins
1/4 cup each shelled pecans or any other nuts
1/4 cup figs
1/4 cup dates
1/4 cup cherries
 

Mocha Frosting

1 carton confectioners sugar
2 tablespoons cocoa
Mix and add to it
2 tablespoons coffee
1 tablespoon butter
1 teaspoon vanilla
Add more coffee if needed, and beat well.

 

Almond Filling

1 pound blanched almonds, ground
2 egg whites, well beaten
1/2 pound confectioners sugar
Mix [egg whites and sugar] well until smooth, add to almonds, spread between layers, plain icing for top and decorate with whole almonds.

 

Apple-Banana Filling

Scrape one good sized apple and mash 1 banana, mix with part of boiled icing. Makes a good filling but does not keep very long as it turns dark.

 

Strawberry Filling

Mash 1 cup of strawberries with one cup sugar, beat the white of 1 egg and add the berries, beat for 25 minutes, fill in the layers and for the top and 1 cup of confectioners sugar and finish icing.

 

Butter Frosting

2 to 4 tablespoons butter, 2 cups confectioners sguar, pinch of salt, 1 egg, flavoring. Work butter through sugar and salt and egg, beat until very creamy and add flavor. Spread on cake. Cocoa, coffee, maple or coloring can be used.
