Fish Kentcuky

Ingredients

Whole small fish, or fish fillets

1 cup milk
1 1/2 teaspoon salt

1/2 cup flour
1/2 cup cornmeal

Salad oil

Method

Dip cleaned, whole small fish (or fish fillets) into 1 cup of milk seasoned with 1 1/2 teaspoon salt. Roll in a mixture of 1/2 cup flour and 1/2 cup cornmeal.

Start frying in 1/4 inch sizzling hot salad oil; reduce heat to moderate, and fry to a golden brown, turning only once. Fish under 1 inch thick, needs 3 to 5 minutes cooking on each side.
