Fruited Pineapple Soup

Ingredients

5 cups pineapple juice
3 tablespoons tapioca
3 tablespoons sugar
1/4 teaspoon ginger, optional
1 teaspoon grated lemon rind
1 cup sliced strawberries
1 large peach peeled and sliced
5 or 6 melon balls
1 banana, diagonally sliced
2 tablespoons Cool Whip, garnish optional 

Method

In a saucepan, combine pineapple juice, tapioca, sugar, and ginger; let stand five minutes. Bring to a boil over medium heat. Simmer for five minutes. Remove from heat, stir in lemon rind. Cool, gently stir in fruit, cover, and chill for two hours or more, serve with whipped cream if desired. 

4 servings.
