Green Bean Souffle

Ingredients

1 tablespoon butter
1 tablespoon flour
1/2 teaspoon salt
1 teaspoon sugar
2 teaspoon lemon juice
Dash cayenne pepper
1/2 cup milk
2 tablespoons grated American cheese
2 eggs, separated
2 cups cooked green beans

Method

Make a smooth, thickened white sauce of the butter, flour, seasoning, and milk. Add the cheese and the green beans, which have been chopped fine or run through the food chopper or rubbed through a sieve. Beat the egg yolks until lemon colored and add. Next, fold in the stiffly beaten whites. Turn into a greased baking dish, or into individual custard cups, and place these in a shallow pan of hot water. Bake in a moaderate oven {350-degrees} about 40 mintues, or until set fluffy and golden brown.
