Ham and Potato Casserole

Ingredients

Butter
3 or 4 medium potatoes, peeled and sliced thin
1 onion, peeled and sliced thin
1 pound left-over ham, sliced thin
White sauce
1/2 cup shredded cheddar cheese
1 teaspoon chopped parsley
Salt and pepper

Method

Butter casserole and line bottom with a layer of potatoes, top with a layer of onions, place layer of ham and repeat.  Place the last layer of ham around the edge of casserole, leaving space in middle.  Pour on white sauce, shaking dish gently from time to time so sauce mixes thoroughly.  Place grated cheese in space left in the center and sprinkle with parsley and season.  Cover with foil, tent and bake 350-degrees 30 minutes.  Remove foil and bake 30 more minutes. 

White Sauce

3 tablespoons butter
3 tablespoons flour
1 1/2 cup milk
Salt and pepper

Melt butter in a pan and blend in flour.  Stir constantly, add milk slowly.  Cook until thick, season to taste.
