Mother Wheeler’s Raisin Cookies

Mother Wheeler's Raisin Cookies

Ingredients

1 1/2 cups raisins
1 1/2 cups water
1 teaspoon soda
1 1/2 cups sugar
1 cup shortening
2 eggs
3 1/3 cups sifted flour
1 teaspoon salt
1 teaspoon cinnamon

Method

Cook raisins in water until all the water is absorbed, about fifteen minutes. Then add soda to raisins. Cream sugar and shortening and add eggs. Beat well. Add dry ingredients and raisins and mix into a dough. Take a small amount of the dough at a time, about a heaping tablespoonful, and form into a ball. Dip in sugar and flatten with a fork, sugar side up, onto a greased cooky sheet. Bake at 375-degrees for 12 to 15 minutes.

This makes about four dozen cookies.
