Ozark Pudding

Vintage handwritten and clipped recipes for Ozark Pudding. An apple pudding similar to an apple torte, excellent served with whipped cream or ice cream.
Ozark Pudding

Ingredients

3 eggs
1 1/2 cup sugar
3/4 cup flour (or 2/3 cup)
2 teaspoons Baking Powder
salt
1 teaspoon vanilla
1/2 cup nuts
1 cup grated apple, about 3 apples

Method

3 eggs, beat until light, add 1 1/2 cup sugar gradually, beat until thick, add 3/4 cup flour, 2 teaspoons Baking Powder, salt, 1 teaspoon vanilla, 1/2 cup nuts, and 1 cup grated apples. 

Bake at 350-degrees for 40 minutes.

Additional Recipe

Included in the Rhode Island collection of Mrs. R is a similar, clipped recipe for Ozark Pudding; nuts are an addition to this recipe.  This clipped recipe is a smaller portion than that of the recipe above.  In fact, Mrs. R's note says that the recipe is the same of an Apple Torte, and "small enough for dinner", 4 or 5 servings.

Ingredients

1 egg
3/4 cup sugar
2 tablespoons flour
1 1/4 teaspoons baking powder
1/8 teaspoon salt
1/2 cup chopped nuts
1/2 cup chopped raw apples
1 teaspoon vanilla

Method

Beat egg and sugar for a considerable time, until very light and fluffy.  Mix flour, baking powder and salt and stir into egg mixture.  Add apples, nuts, and vanilla.  Bake in a buttered pie plate at 350-degrees for 35 minutes.  Serve with whipped cream or ice cream.
