Pineapple Delight

This is a handwritten vintage recipe card for Pineapple Delight - a yellow cake, topped with pineapple, a vanilla pudding/cream cheese mixture, whipped cream, and toasted coconut. 

Ingredients

1 package yellow Jiffy Cake Mix
1 20-ounce can crushed pineapple, well drained
8 ounces cream cheese
1/2 cup milk
2 packages vanilla instant pudding
2 cups milk
1 8-ounce whipped topping
1/2 cup toasted coconut

Method

Bake cake in 9x13 pan.  Spread pineapple on cooled cake. Blend cream cheese with 1/2 cup milk. Blend pudding mix with 2 cups milk and add to cheese mixture. spread over pineapple. Top with cool whip and toasted coconut. 

Chill until ready to serve.
