Pineapple Pie


2 cups hot, crushed, canned pineapple
2 tablespoons cornstarch
1/4 teaspoon salt
2 tablespoons sugar
1 tablespoons butter
1 tablespoon lemon juice
1 tablespoon grated lemon rind


Mix cornstarch, salt, and sugar.  Add to pineapple.  Cool in double boiler 20 minutes, stirring constantly until thickened.  Add butter and cool.  Add lemon juice and rind, fill baked pie shell or chilled crumb crust, and top with whipped cream or meringue.  

Make 9-inch pie. 

Pie Crust

2 cups biscuit mix
1/4 cup shortening
4 or 5 tablespoons ice water

Put together as regular pastry, makes enough for two shells.
