Porcupine Balls

Ingredients

Step1:
1 pound ground beef
1/2 cup uncooked rice
1 egg, slightly beaten
2 teaspoon grated onion
1/4 cup tomato juice
1 teaspoon Kroger salt
1/2 teaspoon MSG or Accent

Step 2 & 3:

2 tablespoons butter or margarine
1/4 cup minced onion
1/4 cup coarsely chopped celery
1/4 cup coarsely chopped green pepper
1 10.5-ounce can Kroger tomato soup
3/4 cup water
2 teaspoons lemon juice
2 teaspoons brown sugar
1 teaspoon dry mustard
1/2 teaspoon Kroger salt
1 teaspoon Kroger tomato sauce
1 teaspoon Worcestershire sauce

2.5 quart casserole with a tight cover

Method

  1. Lightly grease the casserole, then combine and mix lightly the beef, rice, and remaining seasonings. Shape into 1.5 inch balls and put them into a casserole. 
  2. Heat butter or margarine in skillet; add onion, celery, and green pepper. Cook (stirring frequently) until celery is limp.
  3. Remove from heat and add soup, water, and seasonings (stirring constantly). Simmer five minutes.
  4. Pour tomato sauce over meatballs, cover and bake at 350-degrees for 1.5 hours.
