Potato Cheese Puffs


1 cup mashed potatoes
2 eggs beaten
1/2 cup milk
2 cups (8-ounces) cheddar cheese
1/2 cup flour
1/4 teaspoon baking powder
Salt to taste


Combine ingredients except for oil; mix well.  Pour about 2 inches of salad oil in a saucepan and heat to 375-degrees.   Drop batter by tablespoons into hot oil.  Fry 3 to 4 minutes or until golden brown.  

Serve immediately. 

Yield: 24 puffs.
