Pumpkin Cookies

Ingredients
1 cup oleo
1 cup sugar
1 egg
1 cup pumpkin
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon soda
1 cup cut dates
2 cups flour
1/2 cup nuts
Method
Mix oleo, sugar, eggs, pumpkin, and vanilla. Sift flour, baking powder, salt, soda, and cinnamon. Add to butter mixture. Add dates and nuts.
Bake at 350-degrees.
Notes from the Vintage Recipe Test
These pumpkin cookies have a pleasant pumpkin taste (we used canned pumpkin), and the dates (although we substituted raisins) and nuts are excellent addition both in texture and flavor. These old-fashioned pumpkin cookies are soft and light, as you would expect with baking soda and baking powder included in the recipe. These cookies do expand, much like a muffin, when baked. We found it helpful to lightly press down the top of the cookie dough after it was placed on a cookie sheet with a cookie scoop, resulting in a wide cookie rather than a "puffed" cookie.
This recipe yielded about 3-dozen cookies, using a tablespoon cookie scoop to measure the cookie dough.
