Smothered Wild Duck

Ingredients

1 duck
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup all-purpose flour
1/2 cup salad oil
1 cup milk

Method

Cut duck into 6 or 7 pieces.  Season with salt and peppers and dredge in flour, saute duck slowly in hot oil about thirty minutes or until brown on both sides, turning only once. 

Add milk, cover and simmer slowly one hour or bake at 325-degrees for 1 hour.   

Yields three or four servings.
