Ingredients

  • 2 cups Sun-Maid Puffed Raisins
  • 1 cup sugar
  • 2 cups water
  • 1/2 teaspoon salt
  • 2 tablespoons flour
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon extract
  • 2 tablespoons cornstarch

Method

  • Cook raisins, sugar, water, salt, and lemon juice for five minutes.
  • Dissolve cornstarch in three tablespoons cold water.
  • Add to raisin mixture and cook for five minutes longer, remove from fire, add extract.
  • Pour into pastry lined tin, strip top.
  • Bake {? thirty minutes ?} in moderate oven (400-degrees).
