Tuna Croquettes

Tuna Croquettes - vintage handwritten recipe


1 cup thick white sauce
2 well-beaten eggs
1 7-ounce can flaked tuna
1 tablespoon lemon juice
1/4 teaspoon salt
2 cups seasoned mashed potatoes
1 teaspoon Worcestershire sauce

1 beaten egg
1 tablespoon water
Breadcrumbs or crushed corn flakes


Combine ingredients, mix thoroughly, chill.  Mold in fish, steak, or cone-shaped croquettes, dip in egg diluted with water, then in bread crumbs or crushed corn flakes.  Brush with melted fat.  Bake in a moderately hot oven (375-degrees) until brown, about 20 minutes.  Turn once during baking.
