Apricot Buttons

Ingredients

2 sticks oleo
1 cup granulated sugar
2 eggs, separated
1 teaspoon vanilla
2 cups sifted flour

Coconut or crushed nuts
1 package dried apricots
1 cup sugar

Method

Cream 2 sticks of oleo with 1 cup granulated sugar, add 2 egg yolks, 1 teaspoon vanilla, and 2 cups sifted flour. Mix well. 

Chill dough, roll a small ball of dough into beaten egg whites, then into coconut or crushed nuts. Make a hole in the center of cooky – place 1/3 teaspoon cooked apricot in the center. 

Bake at 300-degrees for 30 minutes or until slightly brown. 

 

Cooked Apricots

  1 package dried apricots cooked until soft, add 1 cup sugar, whip and chill to put on the cookie.
