Black Bing Cherry Salad
A vintage handwritten recipe for Black Bing Cherry Salad; this congealed salad is made with Coca-Cola, Black Bing cherries, crushed pineapple, Black Cherry Jell-O, nuts, marshmallows, and cream cheese.

Ingredients
- 2 bottles Coca-Cola
- 1 #2 can black bing cherries
- 1 #2 can crushed pineapple
- 2 packages Black Cherry Jell-O
- Optional:
- Chopped nuts
- Marshmallows or Philidelphia Cream Cheese diced
Method
- Bring cherry juice and Coca-Cola to a boil.
- Dissolve gelatin in the boiling liquid until thoroughly dissolved.
- Add fruit and nuts, chill.
- When nearly set, stir in cheese cubes or marshmallows if desired.

I first had this in the early 1970’s and made it a few times in later years. While it might sound a little questionable now jello in many forms was still a common recipe. This is really good. But haven’t seen the dark cherry jello in decades. I don’t remember the Coke in it but why not…it’s just the sweetness that is needed. The recipe I was given treated the cream cheese and nuts a little differently. Roll/pat the cr. cheese in to small balls and then roll these in chopped nuts ( chop the nuts fairly small). Then stir these in the jello as stated. The color of the dark cherries and jello is pretty and it does taste good…..it was quite a surprise for those at the table other than the cook…..she knew 🙂
