Ingredients 3 egg yolks 2 tablespoons lemon juice 1/2 teaspoon salt {four grains cayenne}  2/3 cup butter Method Put in blender eggs, lemon, salt, and turn on the blender, add butter slowly.

Ingredients 1 cup oil 1/3 cup wine vinegar 4 teaspoons sugar 3 teaspoons salt 2 teaspoons pepper 2 teaspoons dry mustard 2 teaspoons garlic seasoning or crushed 2 teaspoons horseradish   Method  Mix in a jar and shake.

Ingredients 3/4 cup water Juice of 1 lemon 1 level teaspoon cornstarch salt 2 egg yolks 2 tablespoons butter   Method Heat water, lemon, and thicken with cornstarch.  Slowly add thickened mixture to beaten egg.  Add butter.  Put on stove and heat over hot water.

Ingredients 4 egg yolks 1/2 cup sugar 1 level teaspoon mustard salt pepper paprika 2 rounding tablespoons flour 1 cup sweet or sour milk 1/3 cup vinegar 2/3 cup water Method Heat vinegar — when near boiling, add other ingredients.  Stir continually until thick.  Make 1 quart.
