Cheddar Cheese Sauce

Ingredients

8 tablespoons butter
8 tablespoons flour
1-quart milk
1 cup grated very sharp cheddar cheese (or 1 1/2 cups mild and sharp together) 
1/2 teaspoon dry mustard
1/2 – 3/4 teaspoon Worcestershire Sauce

Method

In a heavy saucepan, melt 8 tablespoons butter; stir in 8 tablespoons flour.  Simmer about 10 minutes, without burning.  Slowly add 1-quart milk; stir.  Let thicken.  Add 1 cup grated very sharp cheddar (or 1 1/2 cups mild and sharp together).  Then add 1/2 teaspoon dry mustard, 1/2 – 3/4 teaspoon Worcestershire Sauce.  

Simmer a while.  Use for anything that needs cheese sauce.
