Ingredients
1 large ripe avocado
1 tablespoon mayonnaise
2 tablespoon lemon juice
1/4 cup finely chopped onion
3/4 tablespoon salt
1/4 tablespoon pepper
4 hard cooked eggs, finely chopped
36 cherry tomatoes
Method
1. Mash avocados, stir in mayonnaise and lemon juice.
2. Add egg, onion, salt, and pepper; blend.
3. Scrape out cherry tomatoes and turn upside down on paper towel.
4. Fill each tomato. Serve on a bed of greens.
