A vintage handwritten recipe for Chili Sauce made with tomatoes, chopped onions, green peppers, hot pepper, sugar, salt, mustard seed, celery seed, mixed spices, and vinegar.

Ingredients

  • 1 gallon tomatoes
  • 2 cups chopped onion
  • 2 cups chopped green pepper (sweet)
  • 1 pod hot pepper
  • 2 cups sugar
  • 3 tbsp salt
  • 1 tbsp mustard seed
  • 1 tbsp celery seed
  • 3 tbsp mixed spices
  • 2 1/2 cups vinegar

Method

  • Scald, core, peel & chop red ripe tomatoes. Peel onions,remove seed from peppers chop & measure.  (cook tomatoes - drain offsome of the juice, cuts csooking time.)
  • Mix all except spices and vinegar. 
  • Boil 45 minutes.
  • Add Spices (tied in a bag).  Boil until very thick. Addvinegar and sugar and boil until thick as wanted.  
  • Taste & add more seasonings & sugar as wanted. 
  • Can as desired.
