Chocolate Sauce and Cocoa Cream for Cream Puffs
Ingredients
1/2 cup light corn syrup
1 cup sugar
1 cup water
3 1-ounce squares unsweetened chocolate
1 teaspoon vanilla
Method
In a saucepan combine corn syrup, sugar, and water; bring to boiling. Add chocolate and stir till melted. Simmer over low heat 10 to 15 minutes, or until smooth, stirring occasionally. Add the vanilla. Cool.
Makes about 1 1/2 cups sauce.
Cocoa Cream
1 1/2 cups heavy cream
1/2 cup sugar
1/3 cup cocoa
Combine ingredients. Chill 1 hour. Then beat until stiff. Spoon into cream puffs.
