Chop Suey Pickles


6 large cucumbers, peeled
11 medium-sized onions
3 large sweet green peppers
3 large sweet red peppers
3 tablespoons mixed spices
1/2 cup salt
1/2 pint water
1/2 pint vinegar
4 cups sugar
2 tablespoons celery salt
1 teaspoon curry powder


Slice very thing the cucumbers, onions, and peppers. Sprinkle with 1/2 cup salt and add enough water to cover. Let stand overnight, drain thoroughly. Add vinegar, mixed spices, water, sugar, celery, and salt. Boil for about 10 minutes. Add curry powder, just before removing from the stove. 

Pack into sterilized jars.
