Citrus Chiffon Pie


1 envelope (1 tablespoon) unflavored gelatin
1/2 cup sugar
Dash of salt
1 egg yolks
1/2 cup orange juice
1/3 cup lemon juice
1/4 cup water
1/2 teaspoon grated orange peel
1/4 teaspoon grated lemon peel
4 egg whites
1/3 cup sugar


In a pan mix gelatin, 1/2 cup sugar, and salt. Beat together egg yolks, orange juice, lemon juice, and water, stir into gelatin mixture. Cook and stir over medium heat just until the mixture comes to a boil. Remove from heat; stir in orange and lemon peel, chill, stirring occasionally, until mixture mounds slightly when spooned. Beat egg whites until soft peaks form. Add the 1/3 cup sugar to peaks; fold in gelatin mixture. Pile into a cooled baked pie shell. Chill until firm.
