5 1/2 cups sliced peaches, peeled – about 2 1/4 pounds
2 teaspoons lemon juice

3/4 to 1 cup sugar
1/4 cup flour
Pinch of mace
Dash of salt

2 tablespoons butter or margarine

1 egg yolk
1/2 teaspoon water


Mix 5 1/2 cups sliced peaches, peeled with 2 teaspoons lemon juice. Mix 3/4 to 1 cup sugar, 1/4 cup flour, a pinch of mace and a dash of salt and sprinkle over peaches and toss. Put in a pie crust {top with butter or margaine}. Add top crust and brush with water and egg mixture. 

Preheat oven to 400-degrees, bake 55 minutes or until juice is bubbly.
