Cocada - Coconut Bark

Ingredients

1 coconut
1 pound sugar
4 ounces almonds
1 quart milk
4 eggs

Additional sugar

Method

Place the juice of the coconut with the sugar on to boil and a little water; when it boils, add the grated coconut and stir constantly. After it has boiled for a while, add the yolks in half of the milk and let that boil for a time, then add the ground almonds in the other half of the milk and let it boil until it gets thick and somewhat dry. Pour into a dish and sprinkle granulated sugar over it.
