Coconut-Honey Crisps

Ingredients

2 cups sifted all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup butter or margarine
1 cup brown sugar, firmly packed
1 egg
2 tablespoons honey or molasses
1/4 teaspoon vanilla extract
1 cup coconut

Method

Sift flour, baking powder and salt together.  Now work butter or margarine until soft, and mix sugar in gradually until smooth as possible. Mix in the unbeaten egg, honey or molasses, and vanilla extract.  Stir in sifted dry ingredients and coconut thoroughly.  Shape into a cylinder or roll, wrap in waxed paper and chill in refrigerator at least 3 hours – overnight if you wish. 

Start your oven at 375-degrees or moderate.  Slice the firm dough into cookies about 1/4 inch thick.  Place on ungreased cookie sheets and press the top of each cookie with floured fork tines.  Bake 12 to 15 minutes. 

Makes 6 dozen.
