Coconut Pecan Frosting

Coconut Pecan Frosting

1 Cup Evaporated Milk
3 Egg Yolks slightly beaten
1 Teaspoon Vanilla
1 Cup Chopped Pecans
1 Cup Sugar
1/2 Cup Butter or Oleo
1 1/3 Cup Bakers Coconut (1 Can)
 

Combine Milk, Sugar, Egg Yolks, Butter or Oleo, and Vanilla in a saucepan.  Cook over medium heat, stirring constantly until mixture thickens.  About 12 minutes.  Remove from heat.  Add Coconut and Pecans.  Beat until cool and of spreading consistency.  

Makes 2 1/2 Cups or enough to cover tops of three layers.
